Unbaked Haystack Cookies

  • 3 cups baking oats 
  • 1 cup shredded dried coconut 
  • 1 pinch salt
  • 1 tsp vanilla
  • 6 tsp cocoa powder
  • 2 cups white sugar
  • 1/2 cup margarine
  • 1/2 cup milk
  • icing sugar (optional)
  • In a mixing bowl combine oats, coconut, salt, vanilla, and cocoa podwer. Mix together.

    In a small pot bring to boil the sugar, margarine, and milk.

    Once the mixture is boiling, take it and add it to the mixing bowl containing the oat mixture. Mix with a spoon until well mixed. Scoop with a spoon onto wax paper, one scoop per cookie. Sprinkle icing sugar if you so wish onto the cookies. Allow them to cool to room temperature. To ensure they stay together well, you may freeze them at this point.
