-Half a large acorn squash
-Half a large butternut squash
-1-2 zucchini
-1-2 zucchini
-1/4 cup canola or vegetable oil
-1/2 to 3/4 tsp salt
-1/2 tsp pepper
-1/2 tsp garlic salt
-1/4 cup or more sesame seeds
Preheat oven to 350 F
Wash the squash
Cut the squash in half, store other half for a future recipe, this makes 2 pans
Remove any seeds and filling
Cube the squash and zucchini, rind included and left on, into just larger than bite sized pieces, they will shrink upon cooking
In a large mixing bowl mix the cut squash, oil, salt, pepper, garlic salt, and sesame seeds (add more sesame seeds if you are a fan) until nicely coated
Line 2 flat baking tray with foil
Place the squash mix onto the baking trays being sure to flatten out to 1 layer.
Bake 45 minutes - 1 hour or until the squash pieces are lightly browning on the edges.
Dish, serve, enjoy!
