Orange Chipotle Lamb Chops
Cut off some of the excess fat of the lamb. If anything, cut into the edges of the lamb so as the fat doesn't shrink while cooking causing the meat to curl up.
In one frying pan, braise the meat. Cook to desired "doneness" (lamb can be served medium rare)
In a separate frying pan, mix the orange juice, sugar, hot sauce, tobasco and chipotle pepper powder. Cook on medium to medium high heat. As you cook you may need to add more sugar or more orange juice depending on how the sauce thickens. You want something that runs like light syrup. Turn the temperature down. If the sauce thickens too much during the next step, add more orange juice.
Put the lamb in the sauce as it cooks and allow the lamb to absorb some of the flavor of the sauce. The longer the lamb is in the sauce the more flavorful it will be.
The more lamb you cook the more sauce is needed. Use the extra sauce as a garnish/gravy.
