Chinese Chicken Fried Rice
Precook the rice. Cook medium-firm. Allow to cool a little to a medium warm temperature.
Chop/Dice the vegetables. Chop the chicken.
Use a large wok or frying pan to cook.
Cook the chicken pieces with a little oil and the onion and garlic. Add a dash of soya sauce. Cook until chicken is mostly cooked
Add the frozen peas/carrots and the egg. The egg will stick to everything. Ignore it. Mix it all up, stir often, and don't let it burn. Cook until the chicken is completely cooked.
Add the rice. The rice will stick to the pan and itself. Add more oil, and some soya sauce. Stir often. Add soya sauce until your dish reaches the desired color (see picture above for reference). Add oil until the rice is fried rice consistency.
Mix in the chopped green onion. Cook 1-2 more minutes.
Dish and serve and enjoy!
*The easiest way to clean a frying pan or wok with foodstuffs stuck to it is to add a little dish soap and water to it, and put it back on the burner on medium heat for a short while. The stuff will boil right off. Scrape off the chunks, and finish washing in the sink.*
